Ingredients

  1. 3 tablespoons unsalted butter
  2. 1 large shallot, coarsely chopped
  3. 1 large garlic clove, coarsely chopped
  4. 6 ounces peeled butternut squash, cut into 1/2-inch dice (1 1/2 cups)
  5. 1 medium parsnip, cut into 1/2-inch dice
  6. 1 small turnip, cut into 1/2-inch dice
  7. Kosher salt and freshly ground pepper
  8. 1/2 cup dry white wine
  9. 4 thyme sprigs, plus thyme leaves for garnish
  10. 1 bay leaf
  11. 1 1/4 cups chicken stock or low-sodium broth
  12. 1 tablespoon extra-virgin olive oil
  13. 1 1/2 pounds skinless halibut fillets, cut into 2-inch pieces
  14. 2 tablespoons all-purpose flour
