  5. 1/4 pound thickly sliced bacon, cut crosswise into 1/3-inch strips
  6. 1 cup milk
  7. Freshly ground pepper
  8. 3 large egg yolks
  9. 2 cups shredded Comté cheese (6 ounces)
  10. 1/2 teaspoon chopped thyme
  11. 6 large egg whites
