Foshee's Striped Bass with Caramelized Onion Sauce

Ingredients

  1. 5 pounds fresh fava beans, shelled
  2. 1 stick (4 ounces) unsalted butter
  3. 1/2 cup finely chopped onion, plus 2 medium onions, thinly sliced
  4. Salt and freshly ground white pepper
  5. 4 garlic cloves, thinly sliced
  6. 4 cups Chicken Stock
  7. 2 thyme sprigs
  8. 1/4 cup balsamic vinegar
  9. 12 baby leeks or large scallions, trimmed, leeks rinsed well
  10. 3 tablespoons extra-virgin olive oil
  11. 24 fresh morels (about 4 ounces), rinsed well and patted dry
  12. 2 teaspoons coarsely chopped chives
  13. 1 teaspoon minced shallot
  14. Six 6-ounce striped bass fillets, about 1 1/4 inches thick
  15. 1 teaspoon white truffle oil
