Lattice-Topped Apple Pie

Ingredients

  1. 1 1/4 cups all-purpose flour, plus more for rolling

  4. 1/4 teaspoon salt
  5. 4 ounces cream cheese, chilled
  6. 1 stick (4 ounces) unsalted butter, cut into 1/2-inch pieces

FILLING

  1. 4 pounds large apples (about 8)—peeled, cored and cut into eighths
  2. Finely grated zest and juice of 1 lemon
  3. 3/4 cup sugar, plus more for sprinkling
  4. 3/4 teaspoon cinnamon
  5. 1/4 teaspoon salt
  6. Pinch of ground mace
  7. 1 stick (4 ounces) unsalted butter
  8. 1/2 cup apple cider
