Spiced Turkey Tagine with Prunes

Ingredients

  1. 2 tablespoons extra-virgin olive oil
  2. 1 large red onion, coarsely chopped
  3. 1 leek, white part only, chopped
  4. 1 pound skinless, boneless turkey breast, cut into 1-inch pieces
  5. 1 teaspoon cinnamon
  6. 1 teaspoon ground cumin
  7. 1 teaspoon ground ginger
  8. 1 teaspoon dried basil
  9. 1/4 teaspoon turmeric
  10. Salt and freshly ground pepper
  11. One 15-ounce can chickpeas, drained and rinsed
  12. 1 cup pitted prunes (about 20)
  13. 2 tomatoes, coarsely chopped
  14. 1 large sweet potato (1 pound), peeled and cut into 1-inch pieces
  15. 1 medium carrot, coarsely chopped
  16. 6 pitted dates, chopped
  17. 2 cups vegetable stock or low-sodium broth
