Mazzio's Smoked Duck with Tangerine-Rosemary Salad

Ingredients

SMOKED DUCK

  1. 1 cup fresh tangerine or orange juice
  2. 5 tablespoons light brown sugar
  3. 2 tablespoons unsulphured molasses
  4. 1 tablespoon kosher salt
  5. 1 tablespoon coarsely chopped rosemary
  6. Zest of 2 tangerines or oranges, cut into very thin strips
  7. 1/4 teaspoon each freshly ground white pepper and black pepper
  8. Four 5- to 6-ounce boneless duck breasts, with skin
  9. 1/2 cup long-grain white rice
  10. 1/4 cup loose black tea, such as Ceylon

TANGERINE SALAD

  1. 1/2 cup fresh tangerine or orange juice
  2. 1/2 small shallot, finely chopped
  3. 2 tablespoons Champagne vinegar
  4. 2 teaspoons honey
  5. 1/2 teaspoon minced rosemary
  6. 1/4 cup plus 2 tablespoons extra-virgin olive oil
  7. Salt and freshly ground pepper
  8. 2 large tangerines or oranges
  9. 4 cups (packed) mixed tender greens, such as Boston lettuce and mâche
