- 2 tablespoons unsulphured molasses
- 1 tablespoon kosher salt
- 1 tablespoon coarsely chopped rosemary
- Zest of 2 tangerines or oranges, cut into very thin strips
- 1/4 teaspoon each freshly ground white pepper and black pepper
- Four 5- to 6-ounce boneless duck breasts, with skin
- 1/2 cup long-grain white rice
- 1/4 cup loose black tea, such as Ceylon
TANGERINE SALAD
- 1/2 cup fresh tangerine or orange juice
- 1/2 small shallot, finely chopped
- 2 tablespoons Champagne vinegar
- 2 teaspoons honey
- 1/2 teaspoon minced rosemary
- 1/4 cup plus 2 tablespoons extra-virgin olive oil
- Salt and freshly ground pepper
- 2 large tangerines or oranges
- 4 cups (packed) mixed tender greens, such as Boston lettuce and mâche
