Chicken Curry with Potatoes and Squash

Ingredients

  1. 2tablespoons ground coriander
  2. 1tablespoon plus 1 teaspoon pure chile powder, such as pasilla
  3. 1/4teaspoon turmeric
  4. 3tablespoons water
  5. 1/2cup vegetable oil
  6. 3onions, halved and thinly sliced
  7. 8garlic cloves, thinly sliced
  8. One 1-inch piece of fresh ginger, peeled and thinly sliced
  9. 12curry leaves
  10. 2teaspoons garam masala
  11. 1teaspoon freshly ground black pepper
  12. One 3 1/2-pound chicken, cut into 8 pieces, wing tips removed
  13. Kosher salt
  14. 1large baking potato, peeled and cut into 1-inch dice
  15. 3/4pound butternut squash, peeled, seeded and cut into 1/2-inch dice
  16. One 14-ounce can unsweetened coconut milk
  17. 1cup chicken stock or low-sodium broth
  18. Steamed white rice, for serving
