Chicken and Sausage Jambalaya

Ingredients

  2. 1/2 pound andouille or hot link sausages
  3. 1 large onion, chopped
  4. 2 ribs celery, chopped
  5. 1 green bell pepper, chopped
  6. 2 cloves garlic, minced
  7. 1 1/2 cups long-grain rice
  8. 3 cups canned low-sodium chicken broth or homemade stock
  9. 1/4 teaspoon cayenne
  10. 2 bay leaves
  11. 1 1/2 teaspoons salt
  12. 1 pound boneless, skinless chicken breasts (about 3 in all), cut into 1-inch pieces
