Sweet-and-Sour Vegetable Caponatina

Ingredients

  1. 2 tablespoons pine nuts
  2. 1/2 cup white wine vinegar
  3. 2 tablespoons sugar
  4. 2 tablespoons extra-virgin olive oil
  5. 2 medium onions, finely chopped
  6. 2 celery ribs, finely chopped
  7. Two 1-pound eggplants, cut into 1/4-inch dice
  8. 1 large red bell pepper, cut into 1/4-inch dice
  9. 1 large yellow bell pepper, cut into 1/4-inch dice
  10. 2 medium zucchini, cut into 1/4-inch dice
  11. 2 large tomatoes, seeded and finely chopped
  12. Salt and freshly ground pepper
  13. 2 tablespoons capers, rinsed and finely chopped
  14. 8 black olives, such as Gaeta or Calamata, pitted and chopped
  15. 5 large basil leaves, shredded
