Shrimp and Fennel Ravioli

Ingredients

RAVIOLI

  1. 1 tablespoon unsalted butter
  2. 1/2 small fennel bulb—halved, cored and coarsely chopped, fronds chopped for garnish
  3. 1 medium leek, white and tender green parts, finely chopped
  4. Salt and freshly ground pepper
  5. 12 medium shrimp, shelled and deveined, 8 shrimp cut into 1/4-inch dice
  6. 24 round gyoza skins
  7. 1 egg white, lightly beaten

SAUCE

  1. 3 tablespoons dry white wine
  2. 2 tablespoons minced shallots
  3. 1/4 teaspoon finely grated fresh ginger
  4. 1/2 cup low-sodium nonfat chicken broth
  5. 1 1/2 teaspoons soy sauce
  6. 1 1/2 teaspoons cornstarch dissolved in
  7. 1 tablespoon cold water
  8. Salt and freshly ground pepper
  9. 1/4 cup snipped chives
