Ingredients

  1. 1/3 cup finely chopped carrot
  2. 1/3 cup finely chopped celery root
  3. 4 tablespoons unsalted butter
  4. 1/4 cup minced onion
  5. 2 cups all-purpose flour
  6. 1 1/2 cups milk, warmed
  7. One 6-ounce can solid white tuna packed in water, well drained
  8. 1 1/2 teaspoons salt
  9. 1/2 teaspoon freshly ground
  10. white pepper
  11. 5 large eggs, lightly beaten
  12. 2 cups fine dried bread crumbs
  13. Vegetable oil, for frying
