Coconut Cream Scallop Seviche

Ingredients

  1. 1/2 cup fresh lime juice
  2. 1/4 cup white wine vinegar
  3. 1/4 cup mirin (sweet rice wine)
  4. 1/2 teaspoon finely grated fresh ginger
  5. 1/4 teaspoon minced garlic
  6. 1/2 pound large sea scallops, horizontally sliced 1/3 inch thick
  7. One 14-ounce can unsweetened coconut milk
  8. 1/2 cup diced red bell pepper
  9. 1/2 cup diced fresh pineapple
  10. 2 tablespoons minced chives
  11. 1/8 teaspoon crushed red pepper
  12. Salt and freshly ground pepper
