Fougasse with Provencal Herbs

Ingredients

  • 1 1/2 cups warm water (105°F to 115°F)
  • 1 teaspoon dry yeast
  • 4 cups (about) unbleached all purpose flour
  • 2 tablespoons dried herbes de Provence*
  • 2 teaspoons fine sea salt
  • 4 tablespoons olive oil

    • Yellow cornmeal

    • *A dried herb mixture available at specialty foods stores and in the spice section of some supermarkets. A combination of dried thyme, basil, savory and fennel seeds can be substituted.
