Ingredients

  • pâte brisée
  • raw rice for weighting the shell
  • 4 Granny Smith apples (about 2 pounds)
  • 2 tablespoons fresh lemon juice
  • 6 tablespoons sugar
  • 3 large egg yolks
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/3 cup golden raisins
  • a pinch of cinnamon

  • For the pâte brisée:
    • 1 1/4 cups all-purpose flour
    • 3/4 stick (6 tablespoons) cold unslated butter, cut into bits
    • 2 tablespoons cold vegetable shortening
    • 1/4 teaspoon salt
