- 1 teaspoon ground cinnamon
- 1/4 teaspoon crushed red pepper
- 1 bay leaf
- 2 tablespoons minced garlic
- Four 12-ounce bottles dark beer
- Two 28-ounce cans whole tomatoes, crushed
- 2 tablespoons tomato paste
- 1 tablespoon salt
- 1 tablespoon plus 1 teaspoon dark brown sugar
- 1 ounce (1 square) unsweetened chocolate
- 6 cups cooked red kidney beans (see Note) or four 15-ounce cans, drained and rinsed
- 1 cup grated Cheddar cheese, for garnish
- 1 cup finely chopped green onions, for garnish
- 1/2 cup chopped fresh cilantro, for garnish
