  • 3 tablespoons dark roux
  • 1 (6-ounce) can tomato paste
  • One-halfcup red wine
  • 1 cup ketchup
  • 1 (8-ounce) can tomato sauce
  • 1 tablespoon hot sauce
  • 2 teaspoons minced fresh thyme or 1 teaspoon dried thyme
  • 1 lemon, sliced
  • 2 bay leaves
  • 1 (8-ounce) package sliced mushrooms
  • 1/2cup minced green onions
  • 1/4cup parsley minced
  • 10 cups cooked rice
