Adrienne's Crab Cakes

Ingredients

  • 1 pound fresh crabmeat, picked over for shells and cartilage, and drained
  • 1/4 cup mayonnaise
  • 1 scallion, minced (optional)
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon hot pepper sauce (optional)
  • 3/4 cup dry breadcrumbs
  • Salt, black pepper and cayenne, to taste
  • 1 large egg, lightly beaten
  • 1/4 cup vegetable oil or clarified butter
