  • 1 cup packed light brown sugar
  • 1/4 cup cornstarch
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons Calvados, kirsch, or Cognac
  • 1 cup bleached all-purpose flour
  • 1 cup chopped walnuts
  • 4 tablespoons (1/2 stick) unsalted butter, cut into 1/2-inch pieces and chilled
  • 1 teaspoon ground cinnamon
  • Pinch of freshly grated nutmeg
