Deep Dish Apple Cobbler

Ingredients

  • 7 tablespoons unsalted butter
  • 1/2 cup granulated sugar
  • 1 cup firmly packed light brown sugar
  • 3 tablespoons fresh lemon juice
  • 1 cup plus 1 tablespoon all purpose flour
  • 2 pounds Granny Smith apples, cored, peeled and sliced 1/4-inch thick
  • 2 pounds McIntosh or Gala apples, cored, peeled and sliced 1/4-inch thick
  • 1 cup pecan pieces
  • 2 ounces Calvados or brandy
  • Pinch freshly grated nutmeg
  • 1 teaspoon ground cinnamon
  • 2 pinches salt
  • 1/2 recipe Basic Sweet Pie Crust
  • 1 quart vanilla ice cream, optional
