Bobby Flay's Minestrone With Parmigiano-reggiano

Ingredients

  • 3 tablespoons Extra Virgin Olive Oil
  • 1 large Red Onion
  • 2 large Celery Stalk
  • 4 cloves Garlic
  • 2 large Carrots
  • 14 pound Sliced Pancetta, slices thinly into strips
  • 12 head Savoy Cabbage, finely sliced, blanched and drained
  • 12 bunch Swiss Chard, finely sliced
  • 1 large Potatoes, cut into 1/2 cubes, waxy potato
  • 4 cups Chicken Stock, low-sodium
  • 3 medium Tomatoes, seeded and diced
  • 1 sprig Bouquet Garni, (1 spring rosemary, 4 sprigs thyme, 1 bay leaf and 1 bunch parsley, tied together with kitchen twine)
  • 3 cups Cannellini Beans, (canned or cooked dried beans)
  • 1 cup Spinach, coarsely chopped
  • Kosher Salt
  • Freshly Ground Pepper
  • Parmigiano Reggiano Cheese
