Mexican Tortilla Soup With Frizzled Tortillas

Ingredients

  • 6 tablespoons Butter
  • 3 pounds Onion, peeled, cut in half vertically, and sliced
  • 1 teaspoon Sugar
  • 3 Ancho Peppers
  • 6 cloves Garlic, minced
  • 12 cup Brandy
  • 12 cup Dry Red Wine
  • 6 Corn Tortillas, cut into 1 inch pieces
  • 2 Jalapeno Peppers, stemmed, seeded, ribbed, and minced
  • 1 tablespoon Ground Cumin, (tastes even better if you lightly toast the seeds in a dry saute pan and then grind them yourself)
  • 2 Fresh Bay Leaves
  • 6 cups Chicken Stock
  • 3 cans Chopped Tomatoes
  • Salt and Pepper
  • 12 cup Canola Oil
  • 3 Corn Tortillas, cut into thin strips
  • 1 Avocado
  • 1 bunch Fresh Cilantro
  • Sour Cream
  • 1 Lime
