Ingredients
- 6 tablespoons Butter
- 3 pounds Onion, peeled, cut in half vertically, and sliced
- 1 teaspoon Sugar
- 3 Ancho Peppers
- 6 cloves Garlic, minced
- 1⁄2 cup Brandy
- 1⁄2 cup Dry Red Wine
- 6 Corn Tortillas, cut into 1 inch pieces
- 2 Jalapeno Peppers, stemmed, seeded, ribbed, and minced
- 1 tablespoon Ground Cumin, (tastes even better if you lightly toast the seeds in a dry saute pan and then grind them yourself)
- 2 Fresh Bay Leaves
- 6 cups Chicken Stock
- 3 cans Chopped Tomatoes
- Salt and Pepper
- 1⁄2 cup Canola Oil
- 3 Corn Tortillas, cut into thin strips
- 1 Avocado
- 1 bunch Fresh Cilantro
- Sour Cream
- 1 Lime
