- 2 Scallions, chopped
- cup Red Seedless Grapes, halved (or more)
- 1 cup Green Seedless Grapes, halved (or more)
- 1 Cucumber, peeled, seeded, diced
- 1 Red Bell Pepper, peeled, seeded, diced
- 1⁄2 cup Hazelnuts, toasted & chopped
- 2 teaspoons Lemon Zest, about 2 lemons
- 1⁄2 cup Fresh Lemon Juice, or more
- 1⁄3 cup Extra Virgin Olive Oil, try lime or grapefruit juice instead
- 1⁄2 teaspoon Kosher Salt
- 1⁄4 teaspoon Fresh Ground Black Pepper
- Fresh Mint, optional
- Flat Leaf Parsley, optional
