  • 1 can Black Beans, (15 oz) rinsed, drained
  • 3 cloves Garlic, 3-4, minced
  • 1 Lime, juiced
  • 2 cups Sweet Potato, (heaping) cooked, smashed a bit, but still chunky
  • 12 cup roasted green chiles, chopped
  • 12 teaspoon Ground Cumin
  • 12 teaspoon Chili Powder, or curry, mild or spicy, as you prefer
  • sea salt and black pepper, to taste
  • 2 tablespoons Fresh Cilantro, chopped
  • 2 tablespoons Light Olive Oil, 2-4, or vegetable oil, as needed
  • 8 White Corn Tortillas, gluten free
  • Shredded Monterey Jack Cheese, or vegan cheese, if desired
