Ingredients
- 1 large eggplant, 12-14 ounces, cut into 1/2 inch cubes
- 1 Red Bell Pepper, cut into 1/2 inch cubes
- 2 Zucchini, medium-large, cut into 1/2 inch cubes
- 2 yellow squash, cut into 1/2 inch cubes
- 1 large sweet onion, diced
- 1⁄2 cup Pine Nuts, toasted
- 3 tablespoons Extra Virgin Olive Oil
- 1⁄2 cup Broth, chicken or vegetable
- 1 cup Nicoise Olives, pitted - you can substitute chopped kalamata olives. This is an optional ingredient.
- 3 cloves Garlic, mince finely - feel free to add more if you can take it ;-)
- 2 tablespoons Fresh Basil, chopped finely - can substitute marjoram or oregano. OR 1 Tablespoon dried Herbs de Provence.
- garnish, possible items to add as a garnish - balsamic glaze, crumbled feta cheese-ricotta salata-shredded parmigiano, or additional herbs
