Blueberry Banana Muffins

Ingredients

  • 1 spray Olive Oil, make up several batches and freeze what you don’t plan to eat right away. these are great for a before workout snack, breakfast or dessert. olive oil spray for the tin
  • 34 cup Banana, mashed very ripe bananas (about 2)
  • 34 cup Plain Low-Fat Yogurt
  • 12 cup Honey, i’m surprised that jillian recommended honey, when agave nectar has a lower glycemic index. you could also use stevia, but since it’s a powder, you may need to add additional yogurt to the batter to keep the muffins moist.
  • 13 cup Olive Oil
  • 2 teaspoons Vanilla Extract
  • 2 teaspoons Baking Powder, aluminum-free
  • 12 teaspoon Baking Soda
  • 12 teaspoon Salt
  • 1 cup Blueberries, generous cup fresh or frozen blueberries
  • 12 cup Walnuts, chopped walnuts, toasted (optional)
  • 2 12 cups White Whole Wheat Flour
