Ingredients

2 qt. cooked wild rice
1 qt. cooked barley
2 cups KRAFT Golden Italian Dressing
2 cups canned artichoke hearts, drained, quartered
2 cups grape tomatoes, cut in half
2 cups eggplant, sliced, grilled and cut into medium dice
1-1/3 cups canned chickpeas (garbanzo beans), drained
1-1/3 cups seedless cucumbers, peeled, small dice
1-1/3 cups fresh green beans, blanched, cut into 1/2-inch pieces
1-1/3 cups red onions, thinly sliced
1 cup roasted yellow peppers, chopped
1 cup pitted kalamata olives, chopped
1 cup fresh basil, chiffonade
1 cup Italian parsley, chopped
To taste salt and black pepper
