Flat Grilled Alaska Salmon with Bacon and Potato Hash

Ingredients

3 cans (14 3/4 oz. ea.) Fresh chives, chopped

1 1/2 cups Canola oil

3 cups Vinaigrette, prepared

3 lb. Small red new potatoes, sliced 1/4 inch thick, cooked to just tender, drained and dried

4 Tbsp. Extra virgin olive oil

3 cups Chicken stock

3 cups Bottled clam juice

1 1/2 cups Unsalted butter

1 1/2 cups Snipped chives

1 1/2 cups Fresh dill, finely chopped

As needed Salt and pepper, freshly ground

4 1/2 lb. Pencil asparagus, cut into 1/2 pieces, cooked until just tender, shocked, drained and dried

1 1/2 lb. Applewood smoked bacon,

9 lb. Alaska Salmon fillets, cut 24, 6 oz. ea., boneless, skinless
