Cedar-scented Alaska Salmon with Soft Polenta, Corn Pudding and Pumpkin Seed Vinaigrette

Ingredients

6 tsp. Salt

1 1/2 tsp. Freshly ground black pepper

1 1/2 tsp. Dry mustard

9 lb. Alaska Salmon fillets, cut 24, 6 oz. ea., skinned and boned

6 Tbsp. Unsalted butter

1 ea. Untreated cedar block, at least 1 inch thick, and at least 12 inches square (needs to fit in the lowest part of your oven)

12 cups Soft Corn Pudding

4 1/2 cups Pumpkin Seed Vinaigrette



Polenta and Corn Pudding

3/4 gallon Milk

1 1/4 cups Pumpkin puree, fresh or canned, without sugar

1 Tbsp. Garlic, minced

3 cups Fresh or frozen corn kernels

As needed Allspice, ground

2 1/4 cups Stone-ground cornmeal

As needed Salt and pepper, freshly ground

As needed Cayenne pepper

1/3 cup Sweet butter

1/3 cup Chives, finely sliced



Pumpkin Seed Vinaigrette

2 1/2 cups Shelled pumpkin seeds, raw

3 oz. Pumpkin puree, fresh or canned, without sugar

2 1/2 cups Vinaigrette, prepared
