Vinaigrette:
â¢1 cup fresh tangerine juice
â¢1 cup orange juice
â¢Â¼ cup white wine
â¢1 clove garlic, chopped
â¢2 cloves shallot, chopped

â¢1 tablespoon tubular chives cut small pieces
â¢Salt and White Pepper to taste
Poached Pears:

â¢1/2 cup white wine
â¢1/2 cup granulated sugar
â¢1 bay leaf
â¢1/2 tsp whole peppercorn
â¢1/2 tsp juniper berry
â¢1 whole lemon, slices
Candied Walnuts:
â¢4 oz walnut halves
â¢2 tablespoons corn syrup
â¢2 tablespoons granulated sugar
â¢Pinch cinnamon
â¢Pinch salt
â¢Â½ tablespoon toasted sesame seeds
