2 1/2 cups unbleached all-purpose flour1 1/4 tsp baking powder1 tsp baking soda1 1/4 tsp ground cinnamon1/2 tsp freshly ground nutmeg1/8 tsp ground cloves1/2 tsp salt1 lb medium carrots (6 to 7 carrots, yields 3 cups), peeled1 1/2 cups granulated sugar1/2 cup packed light brown sugar4 eggs1/4 cup coco lopez coconut cream1 1/2 cup vegetable oil, safflower oil, or canola oil

Coconut Creamcheese Frosting

4 8-ounce packages cream cheese1 cup (2 sticks), plus 2 tablespoons unsalted butter2 1/4 cups powdered sugar1 cup plus 2 tablespoons coco lopez cream of coconut1 1/2 teaspoons vanilla extract
