Ingredients

For dough

  • 1 1/2 cups all-purpose flour plus additional for rolling out dough
  • 1 stick (1/2 cup) cold unsalted butter, cut into 1/2-inch cubes
  • 1 1/4 to 1 1/2 lb smoked turkey legs or wings
  • 1 teaspoon salt
  • pinch of sugar
  • 7 tablespoons sour cream
  • 1 large egg beaten with 1 tablespoon water for egg wash

For filling

  • 1/2 small onion, finely chopped
  • 1/2 lb cremini mushrooms, finely chopped (1 1/4 cups)
  • 3 tablespoons unsalted butter
  • 1/4 lb chicken livers, rinsed, trimmed, and finely chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
