Moist Fruit & Nut Loaves (makes 3)

Ingredients

2 cups mashed fruit (any type, bananas, applesauce, strawberries, pumpkin, etc.)
1 cup sugar (or reduce and use more brown sugar)
1/2 cup brown sugar (if you like a light bread, eliminate)
2 eggs
1 teaspoon vanilla (or more if you like)
1 teaspoon salt
1 teaspoon baking soda
1 cube butter melted & cooled slightly or 1/2 cup vegetable oil
3 cups flour (or 2 cups flour & one cup oatmeal)
Options: mixed fruits, add grated apple, carrot, or zucchini, 1 cup nuts, raisins, chocolate chips or any flavor, or 1/2 cup cocoa. Just get creative and combine different fruits, veggies, and flavorings. Also, great to sprinkle nuts, candied ginger, etc. on top then bake. The most favorite is a squash-cranberry-nut bread. And don't forget chocolate-zucchini bread.
