Ingredients
1/2 teaspoon fenugreek seeds 1 1/2 to 2 pounds green, unripe mangoes (see recipe introduction) 1/4 cup mustard oil, or olive oil as a substitute 1/4 teaspoon cumin seeds 1/2 teaspoon fennel seeds 1/2 teaspoon black or yellow mustard seeds 1/4 teaspoon kalonji seeds 2 1/2-inch piece fresh ginger, peeled and cut into slivers 1/4 teaspoon ground turmeric 1 to 1 1/4 teaspoons salt 5 to 6 tablespoons sugar 3 to 4 fresh, hot green chilies 1/2 teaspoon cayenne pepper
