1/4 cup olive oil 1 1/4 lb. beef tenderloin steak, cut into 2- x 1/2-inch strips 2 tablespoons unsalted butter 3 large shallots, finely chopped 1 tablespoon sweet paprika 2/3 cup thinly sliced button mushrooms 2 tablespoons white wine vinegar 3 tablespoons brandy 1 cup chicken stock 3/4 cup sour cream 3-4 pickled gherkins, cut into julienne strips (see Chef's tip) 1-2 slices canned beets, cut into julienne strips
