1 tablespoon olive oil 1 medium onion, sliced and separated into rings 2 cloves garlic, minced 1 lb cut-up mixed fresh vegetables such as sliced carrots; diced peeled parsnips, potatoes, kohlrabi, turnip, or swedes; sliced celery; and/or julienne strips of red or green pepper or sliced zucchini 1 medium eggplant, peeled and cubed 12 fl oz chicken stock 2 large tomatoes, peeled (if desired) and chopped 1 tablespoon finely chopped fresh basil or 1 teaspoon dried basil, crushed 1 tablespoon finely chopped fresh rosemary or 1 teaspoon dried rosemary,crushed 1 bay leaf 1 teaspoon salt 1/4 teaspoon pepper
