Provençal White Bean Soup

Ingredients

1 tablespoon "light" flavored olive oil
1 cup chopped onions
1/2 cup chopped carrots
1/2 cup chopped celery
4 cloves garlic, peeled
1 teaspoon herbs de Provence (may substitute dry thyme)
1 bay leaf
6 cups drained cooked white beans (2 14.5 - ounce cans, rinsed and drained)
5 cups low-sodium, low-fat chicken or vegetable stock
2 ounces lean smoked ham, chopped
1 teaspoon kosher salt
1/2 teaspoon freshly ground white pepper
