Vegan Lasagne

Ingredients

  • 2 cups oat milk
  • 1/3 cup shiro miso paste
  • 1/2 tsp ground nutmeg
  • 2 tbsp olive oil
  • 1/4 cup spelt flour
  • 1 tbsp olive oil
  • 1 large onion finely chopped
  • 3 garlic cloves crushed
  • 2 small red chillies seeded, finely chopped
  • 400 g button mushrooms quartered
  • 300 g pumpkin peeled, diced
  • 1 red capsicum seeded, chopped
  • 1/2 cup mixed basil, thyme, oregano chopped
  • 2 x 400 g can lentils drained, rinsed
  • 2 x 400 g can tomatoes
  • 1 cup vegetable stock
  • 2 tbsp tomato paste
  • 200 g Orgran Rice and Corn Lasagne Sheets
  • 1/2 cup rye or spelt breadcrumbs (made from 2 slices)
  • 1 tbsp olive oil
  • 1/2 tsp paprika
