Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breast, cut into 1-inch pieces
  • ½ pound carrots, cut into ¼-inch pieces
  • ¼ pound parsnips, cut into ¼-inch pieces

  • 1½ cups coarsely chopped yellow onion

  • 3 cups chicken stock, at room temperature
  • 3 tablespoons heavy cream
  • 3 tablespoons chopped fresh flat-leaf parsley
  • 2 tablespoons finely chopped fresh chives
  • 1½ teaspoons salt
  • ½ teaspoon white pepper
  • 1 cup frozen peas
  • 1 cup frozen corn kernels
  • 1¼ cups all-purpose flour
  • 1 teaspoon finely chopped fresh thyme
  • ¼ teaspoon salt
  • ½ cup (1 stick) unsalted butter, softened and cut into small pieces
  • 4 ounces (half an 8-ounce package) cream cheese, softened and cut into small pieces
  • 1 large egg, beaten, for egg wash
