  • 1½ cups coarsely chopped yellow onion
  • 3 pounds butternut squash, peeled and cut into 1-inch pieces
  • 1½ cups peeled, thickly sliced tart apples, such as Granny Smith (about 2 medium)
  • 4½ cups chicken stock
  • 1½ cups fresh apple cider
  • 1½ teaspoons salt
  • ½ teaspoon white pepper
  • ¾ cup heavy cream
