  • 1 ounce dried black morels, stemmed, and halved if large
  • ¼ cup milk mixed with 1 cup lukewarm water
  • 1 tablespoon unsalted butter
  • 1 to 2 teaspoons fresh lemon juice
  • Salt and freshly ground pepper
  • ½ cup heavy cream
  • ¼ cup unsalted chicken stock (storebought or homemade—page 405)
  • 32 medium-thick asparagus spears
  • 1 to 2 teaspoons fine imported Port
