Key West Conch and Bacon Stew

Ingredients

  • 4 slices double-smoked slab bacon, cut into small pieces
  • 1 large onion, chopped
  • 1 celery rib, chopped
  • 1 garlic clove, minced
  • 2 ripe medium tomatoes, chopped and juices retained
  • 2 medium potatoes, peeled and cut into ½-inch cubes
  • 2 pounds frozen conch meat, thawed, pounded till quite thin, and cut into 1-inch pieces
  • 2 bay leaves
  • Salt and freshly ground black pepper to taste
  • 2½ cups water
  • One 5-ounce can evaporated milk
