Lima Bean and Bacon Casserole

Ingredients

  • Two 10-ounce packages frozen lima beans, cooked according to package directions, drained, with cooking
  • liquid reserved
  • 1 tablespoon solid butter plus 2 tablespoons melted
  • 1 tablespoon all-purpose flour
  • 1 tablespoon firmly packed light brown sugar
  • 2 teaspoons dry mustard
  • 2 teaspoons fresh lemon juice
  • Salt and freshly ground black pepper to taste
  • ½ cup dry bread crumbs
  • ½ cup shredded sharp cheddar cheese
  • 6 slices lean applewood- or cob-smoked bacon
