Apricot Gingerbuckle Recipe

Ingredients

  • Butter to grease the skillet
  • 3 cups fresh apricots* (or 2 cups dried *apricots)
  • ¼ to ½ cup sugar
  • 1 teaspoon ground cinnamon
  • ¼ cup brandy, for dried fruit only (optional)
  • 1 cup packed dark brown sugar
  • ½ cup molasses
  • ½ cup vegetable oil
  • 1 large egg
  • 2 cups all-purpose flour
  • 1½ teaspoons ground ginger
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup milk
  • ½ cup sour cream
  • Fresh Whipped Cream (page 302)
