Ingredients

  • 1-2 lb Lamb Loin , or rib cut into 1 1/2 inch cubes
  • 2 cup Extra Virgin Olive Oil
  • 1 Tbsp Black Peppercorn
  • 3 ea Bay Leaf
  • 4 sprig Rosemary Fresh
  • 6 sprig Thyme Fresh
  • 1 bunch Mint Fresh
  • 1 cup Red Wine
  • 1/2 cup Balsamic Vinegar
  • 1 med Onion , peeled and cut into 2 inch chunks
  • 2 med Red Pepper , seeded and cut into 2 inch chunks
