Split Pea Soup With Baby Purple Crusted Baked Potatoes

Ingredients

Split Pea Soup

* 2 1/4 cups green split peas
* 2 1/2 quarts water
* 1 large onion, peeled and chopped
* 2 stalks of celery, chopped
* 3 scallions, chopped
* 1/2 tsp minced garlic
* 1 herb bag (3 cloves of minced garlic, 4 allspice berries, 2 bay leaves, 1 tsp thyme, & 1 tsp basil)
* 2 1/2 tsp Liquid Smoke
* Salt and Pepper
* Shredded carrot (optional garnishing)

Purple Crusted Potatoes

* 24 oz Baby Klondike Purple Potatoes
* 3 tbsp Grape seed oil or Extra Virgin Olive Oil
* 1 1/2 tsp salt
* 1 1/2 tsp white pepper
* 2 1/2 tbsp onion powder
* 1 tbsp garlic granules
