- 500g jap pumpkin, peeled and diced

- 2 orange sweet potatoes, peeled and diced
- 1 small Spanish (red) onion, peeled and quartered
- 2 tblsp olive oil
- 1/2 tblsp paprika
- 1 tsp cayenne pepper
- 1/2 tblsp cumin
- salt
- 1 small fresh red chilli (optional)
- 2 ripe tomatoes, skinned and chopped
- 1/2 tin tomato puree or 2 tblsp tomato paste
- 1/2 bunch coriander
- 1/2 cup beef or vegetable stock
- plain yogurt (optional)
