Moroccan Soup

Ingredients

  • 2 cups green lentils, soaked overnight
  • 500g jap pumpkin, peeled and diced
  • 2 carrots, peeled and diced
  • 2 orange sweet potatoes, peeled and diced
  • 1 small Spanish (red) onion, peeled and quartered
  • 2 tblsp olive oil
  • 1/2 tblsp paprika
  • 1 tsp cayenne pepper
  • 1/2 tblsp cumin
  • salt
  • 1 small fresh red chilli (optional)
  • 2 ripe tomatoes, skinned and chopped
  • 1/2 tin tomato puree or 2 tblsp tomato paste
  • 1/2 bunch coriander
  • 1/2 cup beef or vegetable stock
  • plain yogurt (optional)
