Beef, Fennel And Tomato Stew


  • 2 Tblsp olive oil
  • 900g steak, trimmed and diced (3cm cubes)
  • 1 large brown onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 large fennel bulb, trimmed, thinly sliced
  • 1/2 cup red wine
  • 2 cups beef or vegetable stock
  • 1 can Italian diced tomatoes
  • 1 tsp. caster sugar
  • 3 Tblsp. fresh torn basil leaves
  • 2 tsp. finely grated lemon rind
  • sliced ciabatta bread, grilled, to serve.
