Ingredients
- 1 medium-size monkfish tail, about 700 g (1 lb 9 oz)
- 4 raw tiger prawns or 8-12 smaller ones, about 100 g (3½ oz) altogether
- 1 clove garlic, crushed
- 1 teaspoon ginger purée, or grated ginger
- 1 green chilli, deseeded and finely chopped
- 1 tablespoon sunflower or groundnut oil
- Salt and black pepper
- For the salsa:
- 500 g (1 lb 2 oz) plum tomatoes
- 2 teaspoons coriander seeds
- 1 green chilli, deseeded and finely chopped
- 1 clove garlic, crushed
- 1 stalk lemongrass, outer leaves removed, very finely sliced
- Juice of 1 lime
- To serve: wedges of lime
