- 2 tablespoons olive oil
- 2 teaspoons black peppercorns
- 400 g (14 oz) canned artichoke hearts in water, well drained
- 1 clove garlic, sliced
- 2 tablespoons finely chopped fresh parsley
- 1 tablespoon lemon juice
- 25 g (1 oz) stoned black olives, chopped
- To garnish: a few sprigs of fresh flat-leaved parsley
