Ingredients
- 450g (1 lb) lean mince beef
- olive oil
- 2 small onions, chopped
- a knob of butter
- 2 teaspoons of caster sugar
- large handful of smoked bacon lardons
- 2 cupfuls of hot chorizo sausage, diced
- 4 cloves of garlic, crushed
- 6-12 chillies (pickled or fresh), halved and seeded
- 1 tin of kidney beans
- 1 tin of baked beans
- 1 tin of chopped tomatoes
- 1 tin of good condensed tomato soup
- 1 tablespoon of tomato puree
- 2 tablespoons of tomato ketchup
- 1 beef stock cube
- 2 teaspoons of chilli puree
- 2 teaspoons of hot paprika
- a pinch of steakhouse mixed pepper
- salt and pepper to taste
- half a bottle (500ml) of strong English pale ale (Landlord, Bluebird or Marstons)
- 50g of Red Leicester cheese
